½ lb. banana peppers, seeded and cut into rings

PICKLING JUICE:

2 cups white vinegar
⅔ cups white sugar
½ tsp mustard seed
½ tsp celery seed

Optional** you can use pickling spice and add in a diced seeded jalapeno for zing.

Directions:
Directions:
Sterilize 2-½ pint jars.
In a pot on stove bring vinegar, sugar, mustard seed and celery seed to a rolling boil.
Place washed and cut peppers into the bottom of jars.
Pour hot pickling liquid on top peppers and bring within ½ inch of the top.
Be sure edge of jar has no juice on it.
Place lids and screw on fingertip tight.
Seal Jar and leave for two weeks before using.
