1 cup flour
1 cup milk

Put ½ cube of butter in pan and melt in the oven
Mix the egg mixture thoroughly with a whisk, it should have a good consistency.
Add mixture to the melted butter in the large fry pan.
Bake at 375º for 25 minutes.
The sides should rise, and you know you have success.
Add powdered sugar, real maple syrup or cheese for the Swiss tradition.

My grandma cooked these hotcakes on a wood stove when I was just a young girl. My grandma made Swiss hotcakes when the grandkids came. My mom always made Datch and Swiss hotcakes or me and I always made it for the McKinney kids and grandkids. Now the grandkids are also learning to make it for themselves.
My teen grandsons can eat an entire Swiss hotcake. That is why I am thankful for two ovens and two frypans.
