Blueberry Muffins Recipe

1½ c flour
¾ c sugar
½ tsp salt
2 tsp baking powder
⅓ c milk
1 c blueberries (increase amount of fruit)

Topping:
½ c sugar
⅓ c flour
¼ c butter, cubed
1½ tsp cinnamon

Directions:
Directions:
Preheat oven to 400º.
Spray muffin tin.

Combine 1½ c flour, ¾ c sugar, salt and baking powder in large bowl. Mix.

In 1 cup measuring cup add ⅓ c oil, egg and enough milk to fill the cup to equal 1 cup.
Mix into flour mixture.
Fold in blueberries. Fill muffin tins.

Mix together crumb topping until crumbly.
Sprinkle over top of muffin batter.

Bake for 20-25 minutes until toothpick comes out clean.
Cool in pan for 5-10 minutes and then use a knife to release the muffins and then remove to wire rack to finish cooling.

These muffins are moist and tender.
I have substituted strawberries for the blueberries and the family loved them. I think any fruit will work.
