2 T each butter and olive oil
1 c raw arborio rice (must use arborio)
c diced onion
c diced carrots
3 c chicken broth, divided (can sub vegie broth)
1 c fresh spinach, sliced
c parmesan

Directions:
Directions:
In a 2 qt. casserole dish, microwave butter and oil on high for 2 minutes. Stir in rice, onion and carrot, cook on high for 4 minutes. Stir in 3 cups broth. Cook on high for 18 minutes. Remove from microwave, stir in remaining broth, spinach and cheese. Let stand covered for 5 minutes, stirring once or twice.

Add in some broccoli or asparagus or any other veggie you like...just cut them up pretty small.
