1 rump, chuck, etc roast
1 onion; chopped
some olive oil
2 cup beef broth; approx
1/4 cup balsamic vinegar; approx
3-4 carrot; sliced
2-3 stalk celery; sliced
Salt and pepper to taste
3-4 potato; quartered

Directions:
Directions:
Brown onion in olive oil. Brown meat in olive oil. add all other ingredients except potatoes. Put in covered Dutch oven in a 275 degree oven for about six hours. Add potatoes to the rest about 30-40 minutes before serving. Remove meat to platter, potatoes and carrots to a bowl, and serve the liquid in a gravy boat to put on potatoes and meat.

This is a classic Sunday dinner. It is easy to mess up unless you braise the meat for a long enough time.
