1 TBLS peanut oil
1 pound ground chicken or turkey
1/2 C Asian peanut sauce
1/3 C chopped green onions
1/2 C shredded carrots (I use the store bought shredded carrots because they are thicker )
1/4 C shopped water chestnuts
1 head iceberg lettuce


Dipping sauce:
1 C apricot preserves
1/4 C sweet chili sauce


Directions:
Directions:
Sauté ground turkey in peanut oil. Add carrots and water chestnuts. Cook for a minute or two.
Add peanut sauce, soy sauce and green onions. Spoon meat mixture in lettuce leaves or works
great in flour tortillas. Top with dipping sauce.


It's also good served over rice!
