8 oz or 2 cups grated zucchini (grated coarsely and pack loosely in measuring cup)
3 large eggs
1 cup mozzarella cheese, shredded
1/4 cup coconut flour
1/2 tsp sea salt (plus a little more to sprinkle in step 2)

Directions:
Directions:
1. Preheat oven to 350 degrees. Grease or parchment paper a cookie sheet.
2. Spread out zucchini onto pan in a thin layer and sprinkle sea salt. Bake 10-15 mins until zucchini is semi soft and fairly dry.
3. Meanwhile, combine eggs, mozzarella cheese, coconut flour, and 1/2 tsp sea salt in a large bowl.
4. When zucchini is done, pat dry as much as possible with paper towel. Mix into bowl.
5. Line your pan with parchment paper and spray the parchment paper.
6. Spread the zucchini dough thin on greased parchment paper. Bake 20-30 mins, until there are brown spots on the top.
7. Remove from oven. Increase the oven temp to 400 degrees if you are using immediately
8. Let crust rest 10 mins at room temperature before adding sauce and toppings.
9. If baking right away bake for 10 more mins or until cheese on top melts and browns to your liking.
