1/2 cup sugar
3 Tablespoons cornstarch
1/2 teaspoon salt
3/4 cup sugar
2 egg yolks (slightly beaten)
1 1/2 teaspoons lemon rind
1/4 cup lemon juice
1 Tablespoon butter

Directions:
Directions:
Cook sugar, starch and salt in double boiler until thick. Pour a small amount into egg yolk and back into pan.
Cook 2 minutes longer. Add juice, rind and butter. Mix well. Let cool.

FOR ORANGE CAKE FILLING: Same as for lemon, but substitute 1 Tablespoon orange rind, reduce lemon juice to
1 Tablespoon and add 1/4 cup orange juice.
