Pinto Bean Fruit Muffins Recipe

2 c. cooked pinto beans
1/3 c. cooking liquid from the beans
1/2 c. margarine
1 c. flour
2 c. chopped apples
2 tsp. vanilla
1 tsp. cinnamon
1 egg, beaten
1/2 tsp. salt
1/2 c. sugar
1 tsp. baking soda
3/4 c. raisins

Mash beans with the liquid. Cream margarine, add sugar gradually, beating until fluffy, add egg and mashed beans. Mix thoroughly. Sift together flour, soda, salt and cinnamon. Add 1/2 flour mixture to the batter and stir well. Add apples, raisins and remaining flour mixture. Stir just until mixed. Spoon into muffin cups. Bake at 350 degrees for approximately 20 minutes.
