2 - 2½ lbs. frying chicken, cut in serving pieces
1 c. buttermilk
1 c. flour
1½ tsp. salt
¼ tsp. pepper
3 lbs. shortening

Directions:
Directions:
Preheat shortening to 375°. Dip chicken in buttermilk and drain. Combine flour, salt, and pepper in pepper bag. Place 2-3 pieces of chicken in bag and shake to coat evenly. Fry until golden brown, 10-12 minutes. Drain on paper towels. Place in foil lined pan on rack and finish baking in oven.
