1 box cake mix (either yellow or white)
3 eggs or 3/4 c. egg beaters or 3 egg whites
1/2 c. vegetable oil
1- 11 oz. can and juice Mandarin Oranges, in light syrup
Directions:
Directions:
Beat above and pour into greased 9 x 13 pan. Bake for 25-30 minutes in 350º oven. Remove and cool.

Topping:
Fold into 8 oz Cool Whip- 1 small package instant vanilla pudding and one 15 oz. can crushed pineapple and juice, 1 1/2 tsp. vanilla.

Spread on cooled cake. Keep refrigerated.
