Small beets
2 c sugar
2 c vinegar

Directions:
Directions:
Wash beets. Leave 3 inches of tops on and roots. Cook until skins slip easily (about 15 minutes). Place in cold water and slip off skins, tops, and roots. Make a pickling syrup of the remaining ingredients. Cover beets with mixture and simmer for 15 minutes. Place in pint jars and seal immediately. Process 30 minutes in boiling water bath.
