Ingredients: 1 loaf crusty Italian bread Robust olive oil Minced garlic Freshly grated Parmesan cheese 2 Stemless Italian wine glasses

Directions:Pour yourself and your best girl a glass of Chianti. On a bread plate, pour a tablespoon or two of olive oil on the bottom. Sprinkle a 1/4 teaspoon of finely minced garlic onto the oil and top with a tablespoon or more of the Parmesan. Tear off a piece of the bread. Swirl. Enjoy. Sip your Chianti. Solve the world's problems. Repeat the process until the wine or bread runs out. |

Notes: With the closure of the Roma Restaurant in 1997, a D'Amour tragedy, Gigi's hunt for an Italian restaurant she could call her own, became "A mission from God." The Pines of Rome in Bethesda fulfilled her mission. Ask anyone who has spent anytime in or around Bethesda about The Pines and their eyes usually light up and they say, “I love the Pines!" In a time when the competition is fierce from corporate chains flooding Bethesda, they are one of the last of the old fashioned, individually-run, traditional Italian restaurants. A Bethesda institution for over 45 years, they have been imitated by many. But make no mistake, there is only one Pines of Rome.
