1 cup dried large lima beans
3 cup water
1 lb. bulk pork sausage
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup chopped green pepper
1 (16 oz) can whole tomatoes, undrained and coarsely chopped
1/2 cup tomato sauce
1/4 tsp salt
1/8 teaspoon pepper

Directions:
Directions:
Sort and wash beans; place in a large saucepan with 3 cups water. Bring to a boil; cook 2 minutes. Remove beans from heat; cover and let soak 1 hour. Place beans over medium heat; cover and simmer 1 hour or until beans are tender adding more water if necessary.

Combine sausage, onion, celery, and green pepper in a large skillet; cook until sausage is browned, stirring to crumble. Drain off pan drippings. Add beans,tomatoes, tomato sauce, and seasonings; stir well. Spoon into a lightly greased shallow 2 quart casserole dish.

Bake at 350 for 20 minutes or until thoroughly heated.
