1/2 Cup Shortening(I use Butter Flavored )
1 Stick Butter
2 Cups Sugar
5 Eggs (separated)
2 Cups all-purpose Flour
1Tsp. Soda
1/2 Tsp. Salt
1 Cup Buttermilk
1 Tsp.Vanilla
2 Cups Frozen Coconut

Directions:
Directions:
Cream butter,shortening and sugar.Add egg yolks one at a time,beating well after each.Add Dry ingredients alternately with buttermilk.Stir in coconut and fold in stiffly beaten egg whites..Put in 3 layer pans or a 9x13 pan..Bake 35-40 min.@350 degrees for layers or around 1 hour for 9x13..

1 Box Powdered Sugar
2 Cups Coconut
8 oz. Cream Cheese(softened)
1 Cup pecans (chopped)
