1/3 cup shortening
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 tsp. salt
1 tsp. vanilla
1 cup flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1 cup oatmeal
1 cup coconut

Directions:
Directions:
Beat shortening until soft. Add sugars, egg and vanilla, beat until creamy. Add salt, flour, soda and powder. Stir in oatmeal and coconut. Roll into balls until dough is shiny. Place balls on ungreased baking sheet, press with fork. Bake at 375 F for 12 - 15 minutes.
