Tuna Salad:
Use your favorite recipe or this basic one.
1 can tuna in water, drained
1/8 cup or less to taste finely diced red onion
1/8 cup or less to taste finely diced celery
1 tsp. celery salt
1 tsp. dried parsley
2-3 Tsp. mayonnaise
1 tsp. Durkees sauce (optional, but Grandma Charlotte would never omit the Durkees sauce)

1 croissant
4 thick slices Muenster cheese
1 ripe tomato, sliced
1 Tsp. butter

Directions:
Directions:
Prepare tuna salad by mixing all ingredients.

In a skillet with a lid, melt butter. Slice croissant in half and top each half with tuna salad. Top with tomato and cover with cheese. Heat sandwiches over medium heat covered for about ten minutes until warm in the center and cheese is fully melted. Finish for one minute in the broiler so sides of croissant and cheese start to brown and cheese bubbles.

This is my take on the tuna melt at Day by Day at 21st and Sansom. Itís absolutely delicious, and they do all their baking in house, so have it there if you can, but this is an adequate substitute.
