Crustless Spinach Quiche Recipe

1- 10 oz frozen Spinach, defrosted and well drained
2 cup shredded cheddar
3 eggs beaten
Salt and Pepper
1 cup finely chopped onion
1 cup cottage cheese
3 TBSP flour
1 cup chopped fresh mushrooms
4 Tbsp butter
Nutmeg to taste

In medium skillet melt butter and sauté onions until golden not brown. Add mushrooms and cook until barely soft. Transfer to large mixing bowl. Place spinach in bowl and beat in eggs. Add remaining ingredients and beat thoroughly until blended. Taste and adjust seasoning accordingly.

Grease a pie pan and pour in mixture.

Bake 46 to 60 minutes until set.
