1 head - fresh cauliflower, chopped into small florets
1 cup - heavy whipping cream
⅓ cup - cream cheese, cubed
1 cup - shredded cheddar cheese
½ cup - shredded mozzarella cheese
½ tsp. - minced garlic
1 tsp. - salt, divided
¼ tsp. - black pepper
½ cup - shredded parmesan cheese

- Preheat oven to 400º F.
- Bring a large pot of water to a boil. Season with ½ teaspoon of salt. Carefully drop the cauliflower into the boiling water and cook for 5 minutes. Drain thoroughly and let cool for a few minutes. Pour the cooked cauliflower onto a hand towel, then fold up the corners and twist over the sink to squeeze as much moisture out as possible. Set aside.
- In a large pan, bring the heavy whipping cream to a simmer. Add in the cream cheese and stir until smooth. Add the cheddar cheese, mozzarella cheese, and garlic. Stir until the cheeses melt, about 2 minutes.
- Remove the cheese sauce from the heat and stir in the cauliflower. Sprinkle with the pepper and remaining salt.
- Grease a 13"x9" baking dish. Pour mixture in.
- Top with shredded parmesan cheese.
- Bake for 20 minutes, or until the top is browned.
- Let cool for 5 minutes before serving.
