1 1/3 c. oat flour
3/4 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
3/4 c. plant based butter, melted and cooled
3/4 c. coconut sugar
1/2 c. stevia
1 tbsp. honey
1 tsp. vanilla extract
1 large egg
2 1/4 c. old fashioned oats
1 1/4 c. dark chocolate chips

Directions:
Directions:
In large bowl, mix together flour, cinnamon, baking soda, and salt, set aside. In stand mixer, beat together melted butter and sugars. Add honey, vanilla, and egg, and continue to beat. Turn mixer down and mix the flour mixture. Mix in oats and chocolate chips. Scoop dough onto lined cookie sheet , slightly flatten, and chill for 2 hours. Preheat oven to 350ºF. Bake for about 12 minutes and allow to cool.
