1 c. natural creamy peanut butter
2/3 c. coconut sugar
1 tsp. vanilla extract
2 eggs
3/4 c. old fashioned oats
1 tsp. baking soda

Directions:
Directions:
Preheat oven to 350F. Line baking sheet with parchment paper. In small bowl, mix oats and baking soda, set aside. In large bowl, mix together peanut butter, brown sugar, eggs, and vanilla extract with hand mixer. Mix in oat mixture. Scoop cookies out onto the pan and flatten slightly. Bake for 8 minutes until edges are barely golden. Remove and allow to cool.
