¼ Cup Olive Oil
1 Tsp. Ground Cumin
1 Tsp. Brown Sugar
2 Tbsp. Lime Juice

Salad
½ Red Onion
1 Yellow Bell Pepper Diced
1 Green Bell Pepper Diced
1 Red Bell Pepper Diced
¼ Cup Cilantro Leaves Chopped
2 Stalks Celery Chopped
2 Plum Tomatoes Chopped
1 15 Oz. Can Black Beans
Salt
Pepper

Optional
Salad Mix
½ Cup Shredded Monterey Jack Cheese

Directions:
Directions:
Add all chopped and diced vegetables together in bowl. Drain and rinse black beans. Add to bowl with vegetables. Salt and pepper to taste. Whisk dressing together and add to vegetable and bean mixture. Wrap and refrigerate for at least an hour prior to serving.

You can use salad mix and top with mixture adding Monterey jack cheese on top of salad and mixture.
