Leftover pie crust trimmings
Melted butter
Sugar - white or light brown
Cinnamon

Preheat your oven to 350ºF. Gather your pie trimmings into a ball. Lightly flour your rolling surface and the top of the dough ball. Roll the dough out into the rough shape of a long thin rectangle. Sprinkle with sugar, then with cinnamon. Dot with butter. Roll the dough and slice the tube into cookies. Dot with melted butter. Bake the cookies for 30-45 minutes till the edges are golden brown and the cookies are crisp. Baking time will vary based on how big the cookies were cut.

Mom made sure she had plenty of extra dough from pies and would save the trimmings to make pinwheel cookies. This is a kids favorite - and better than the pies themselves!!They smell like heaven as they’re baking! Nothing better and gone as fast as they came out of the oven!!
