8-10 potatoes
3 slices farmhouse bread, crust removed, cubed
3 Tsp butter
1 medium onion, diced
2 stalks celery, chopped
2 Tsp chopped parsley
2 eggs

Directions:
Directions:
Cook, season and mashed potatoes. Sauté onion, celery and bread cubes in butter until tender. Combine potatoes, onion/celery/bread mixture, parsley and raw eggs, beating until well mixed. Place in casserole dish.

CAN BE MADE AHEAD AND FROZEN AT THIS POINT!

To heat and serve, thaw if frozen. Bake at 400° until set and golden on top, about 40 minutes. If baking from frozen, allow 1 to 2 hours to bake.
