Granny Owen (Lena Mae Owen)

1/2 c. Crisco
1 1/2 cup sugar

2 whole eggs (beat well) then add
2 oz. red cake coloring.

Sift together:

2 cups flour
1 Tbs. cocoa
1 tsp. salt

Add to cream mixture alternately with

1 cup buttermilk
1 tsp vanilla

Then add:
1 tsp soda dissolved in 1 TBS. vinegar.

Can make this into layers or in a sheet pan. (sprayed with Pam)

Bake at 350 for 30-35 minutes but do not over bake or it will dry out.

White Icing

Cook 1/4 cup flour (best to use Wondra) and 1 cup milk until thick. chill

Then, cream real good, until you can't taste the granules of sugar:

1 cup sugar
1/2 c. crisco
2 tsp vanilla (might want to use clear)

Then add the chilled mixture and beat until it is nice and fluffy, No lumps.

Spread between layer of the cake and on the cake. Can put on coconut if desired.

P.S. Mrs. Enloe said this icing was just like whipped cream. (According to the written recipe! LOL)

Personal Notes:
Personal Notes:
This is the white icing as opposed to the date icing on Granny Cox's Waldorf Astoria Red Cake.
Surprisingly, both my grandmothers made this cake and I had not tasted a red velvet cake with white icing until I moved to Booker!
