1¾ lb. peeled Carrots
½-1 c. sugar
1½ tsp. Baking Powder
1½ tsp Vanilla
3 Eggs, well beaten with mixer
1 stick Butter (room temperature)
2 tbsp. Flour
Powder Sugar (for garnish)

Directions:
Directions:
Boil Carrots until very soft, drain well.
Put in a large mixing bowl.
Add Sugar, Baking Powder and vanilla.
Beat until smooth.
Add Flour and mix.
Add well beaten Eggs and mix.
Add Butter and mix well.
Pour int 2 qt. baking dish sprayed with Pam®.
Bake in 350º oven for 1 hour or until light brown.
Sprinkle top with Powder Sugar.
