3½ cups unsifted flour
2 Tbsp. sugar
1 tsp. salt
1 pkg active dry yeast
1 cup water
1 Tbsp. margarine (or butter)
1 egg yolk, beaten
1 Tbsp water
coarse salt

Directions:
Directions:
Mix together 1 cup flour, salt, sugar and undissolved yeast.
Heat water and margarine to 120º and add to dry ingredients.
Beat at medium speed of mixer for 2 min.
Add 1/2 cup flour and beat at high speed of mixer for 2 min.
Stir in enough additional flour to make a soft dough.
On floured board, knead for 5 minutes.
Set in greased bowl and turn to grease top.
Cover and let rise in a warm place for 40 minutes.
Divide dough into 12 equal pieces. Roll each in a 20" rope and shape into pretzles
Place on greased baking sheets.
Cover and let rest 5 minutes.
Mix egg yolk and water; brush on pretzles. Then sprinkle with salt.
Bake at 375º for 15 minutes or until done.
Cool on racks.
