1 ⅔ c. oat bran
1 scoop vanilla protein powder
1 tsp. baking soda
1 tsp. cinnamon
tsp. ginger
⅛ tsp. cloves
⅔ c. pumpkin puree, canned (not pumpkin pie mix)
c. applesauce
c. greek yogurt
1 tbsp. maple syrup
2 egg whites
1 tsp. vanilla
c. chocolate chips

Preheat oven to 375F. Coat muffin tin with cooking spray. In a medium bowl, whisk together the oat bran, protein powder, baking soda, cinnamon, ginger, and cloves; set aside. In a large bowl, mix pumpkin, applesauce, greek yogurt, egg whites, maple syrup, and vanilla together until well-combined and smooth. Add wet ingredients to dry ingredients and mix until just combined. Let batter sit for 2 minutes to thicken. Divide batter evenly into 12 muffin cups. Bake 18 - 23 minutes. Let rest for 10 minutes, remove muffins from pan. Place on wire rack to cool.
