Ingredients: 5 Links of Italian sausage. Hot, sweet or mild.. Your choice or mix and match One onion, cut into wedges Sweet Red or yellow peppers. ( usually not green) 8 oz Baby Bella mushrooms garlic cloves White wine
Pasta ... anything is fine.. try something small and different. we use mini bow ties and Orecchiette.

Directions:To prepare: remove casings off the sausages, leave whole for now and brown with a little bit of water. As you turn the sausages, using a spatula, cut the meat into smaller pieces. Brown until a bit carmelized. Add a little water. Remove the sausage to a plate.
Add peppers cut into spoon size pieces ; add salt and pepper. Cook 5-6 minutes ... not mushy
Add onion wedges. cook 5 min. add mushrooms.
Add chopped or minced garlic and cook for another 2 min or so.
Put everything all together, add white wine to make the sauce.. quantity is your choice :)
as that is simmering and reducing, cook pasta.
Serve like this: Pasta, sausage and Peppers, sauce, Parmesan cheese on top and or Red Pepper Flakes. |

Notes: When I make this... it feeds 2! well, Mike eats 3/4 and I have 1/4 ~~ When Mom was so sick, my brother was here for quite a while and cooked dinner one night. WITH tons of help from Jenny !! but it was soooo good.... We didn't care how much mess he made of my kitchen.. after all we ARE related ... Messy kitchens are our in our DNA.
