Connie Butler

5 tomatillas
small onion
1 serano pepper (leave 1/2 seeds or all for more spice)
1 clove garlic
1/2 lime - juiced
1/2 fresh pineapple
1 tsp Kosher salt

Roast the tomatillas until smushed.

Blend all ingredients in the blender. Cool and enjoy with anything!

(I don't usually have a Serano, so I use sweet, hot jalapenos.)

Again, I tried to copy a recipe from Abuelos to get this sauce. Most folks thought it needed to be hotter. Adjust to your own taste.
I also roast more than 5 tomatillas. Doesn't make a very large batch.
