2 c. flour, divided
1 c. sugar, divided
1 tbsp. pumpkin pie spice
tsp. baking soda
tsp. salt
1 egg
1 c. pumpkin, canned
⅛ c. oil
1 granny smith apple, peeled and chopped
of 250g pkg. brick cream cheese, softened
tsp. cinnamon
2 tbsp. margarine

Directions:

*Reserve cup of flour and cup of sugar. Heat oven to 350F. Mix remaining flour, sugar, pumpkin spice, baking soda, and salt in large bowl until blended. Whisk egg, pumpkin and oil in a medium bowl until blended; stir in apples. Add to combined dry ingredients; stir just until moistened. (Butter will be lumpy.) Spoon batter into 12 cup muffins cups sprayed with cooking spray. Mix cream cheese and cup of the reserved sugar until blended; spoon over muffin batter. Press lightly into batter with back of the spoon. Mix reserved flour, remaining sugar and cinnamon in medium bowl. Cut in margarine with pastry blender or 2 knives until mixture resembles coarse crumbs; sprinkle over batter. Bake muffins for 25-30 minutes or until toothpick inserted in centres come out clean. Cool in pan for 5 minutes. Remove to wire rack; cool slightly.
