2 c. flour, divided
1 ½ c. sugar, divided
1 tbsp. pumpkin pie spice
¾ tsp. baking soda
½ tsp. salt
1 egg
1 c. pumpkin, canned
⅛ c. oil
1 granny smith apple, peeled and chopped
½ of 250g pkg. brick cream cheese, softened
½ tsp. cinnamon
2 tbsp. margarine

Directions:

*Reserve ¼ cup of flour and ½ cup of sugar. Heat oven to 350ºF. Mix remaining flour, sugar, pumpkin spice, baking soda, and salt in large bowl until blended. Whisk egg, pumpkin and oil in a medium bowl until blended; stir in apples. Add to combined dry ingredients; stir just until moistened. (Butter will be lumpy.) Spoon batter into 12 cup muffins cups sprayed with cooking spray. Mix cream cheese and ¼ cup of the reserved sugar until blended; spoon over muffin batter. Press lightly into batter with back of the spoon. Mix reserved flour, remaining sugar and cinnamon in medium bowl. Cut in margarine with pastry blender or 2 knives until mixture resembles coarse crumbs; sprinkle over batter. Bake muffins for 25-30 minutes or until toothpick inserted in centres come out clean. Cool in pan for 5 minutes. Remove to wire rack; cool slightly.
