1-2 lb side of fish, deboned with the skin on
White wine, dry, preferably local to your campground
Herbs if desired
Salt to taste

Catch fish. Clean and debone fish. Alternatively, buy fish at a local market.

Place fish in an airtight container and cover with white wine and herbs. Marinate for at least 24. Sear fish, skin-side down, in a metal skillet over the campfire. Continue to cook until fish is flaky. Serve immediately.

Jordan makes this with whatever we have on hand and whatever he catches that day. He thinks that using a local wine enhances the flavor. I’m not sure if that’s true, but the fish turns out delicious and I’m not going to complain. He first made this for me at a campground along the Bass River.
