1/4 cup plain yogurt
1 Tablespoon apple cider vinegar
1/4 teaspoon kosher salt
3 cups skinless roasted chicken, shredded
1/2 cup chopped celery
1 medium apple, chopped
1/2 cup chopped walnuts
Mixed salad greens

Directions:
Directions:
1: In a large bowl, whisk together the yogurt, vinegar, and salt.

2: Add the chicken, celery, apple, and walnuts, and toss well to coat.

3: Serve on four salad plates over the salad greens.

Vegan version: replace chicken with roasted tofu and the yogurt for Veganaise (mayo-alternative).

This was a super easy recipe to make while I was pregnant with Everett. For make-ahead meals: I just left the chicken out so I could warm it up before adding it.
