2 Cups all-purpose Flour
1/2 tsp Salt
3 Tbsp. Olive Oil
3/4 cup Water

for Gluten Free Flour Tortillas:
replace the all-purpose flour with
1 3/4 cups rice flour,
1/4 cup Tapioca Starch,
1 tsp xanthan gum.
salt is only for flavor.

Mix all ingredients into a large zip lock bag. Squeeze until dough forms. Or use a food processor to blend it together. Drop the dough onto a floured surface kneed dough for 5 minutes or until dough is smooth if dough feels a little sticky wet add a bit more flour. Cover let sit for 15 minutes. Cut ball into 8 even pieces. Sprinkle flour on your rolling pin and also the surface. Flatten the dough ball, and use your rolling pin to roll each ball into an 8 - 9 inch circle. Sprinkle extra flour if needed to prevent sticking.
Cook the tortillas in a pre heated, dry skillet. the tortilla is ready to flip when it begins to bubble and form light brown spots. Flip and cook other side. Cover with a towel to keep them warm. Can store for 24 hrs in a zip lock bag.

These taste so much better than store bought. For a nutty sweet flavor try Spelt or White whole-wheat flour. Add an extra 2-3 Tbls. of water for softer dough also let the dough rest for 30 minutes.
