1/4 c brown sugar
2 T corn starch
1/2 t salt
3/4 c liquid from canned pineapple
1/2 c vinegar
1 T soy sauce
3 c cooked diced chicken
1/4 c onion, thinly sliced
1 c pineapple chunks, drained (save juice)
1/2 c celery strips, 1" long, thinly sliced
1/2 c green bell peppers, thinly quartered
2 T pimiento, diced (optional)
2 c cooked rice
chow mein noodles, optional

Directions:
Directions:
Combine brown sugar, corn starch and salt. Stir into pineapple liquid in saucepan. Add vinegar and soy sauce. Bring to boil. Reduce heat and cook until thick, stirring constantly. Remove from heat and set aside. In separate pan, add cooked chicken, pineapple, celery and green pepper. Cook 5 minutes. Add pimiento and cook 1 minute longer. Serve on bed of rice and garnish with chow mein noodles.
