All Ingredients must be room temperature

2 8 oz. packages of cream cheese
16 oz. of sour cream
3 eggs separated
1 cup sugar
1 tsp vanilla

Crust
1¼ cup graham cracker crust
5 T melted butter
3 T sugar
1tsp. cinnamon

Directions:
Pre Het oven to 375
Grease 8" spring form pan
sprinkle sides of pan with bread crumb mixture. Put the rest on the bottom of the pan.
Beat cream cheese until fluffy and light. Add sugar gradually.
Add egg yolks one at a time, beating after each one.
Fold in vanilla, egg whitesand sour cream.
Pour into pan. Bake at 375 for 30 minutes.
Turn off oven and leave the cake in the oven an additional hour.
Place under the broiler and brown the top. You need to watch carefully because it burns easily.
Unlock and let stand for 15 minutes .
Remove from pan and refrigerate.8 hours before serving.

Papau brought this recipe home from work when we were first married. His co-worker, Ed Kershaw, made it for everyone's birthday. I made it every year for his birthday for most of our marriage.
