2 1/2 lb. medium red-skinned potatoes
5 tbsp. olive oil
one 12 oz. cucumber peeled seeded and cubed
4 large plum tomatoes diced or 6 oz. cherry tomatoes sliced in half
2 scallions thinly sliced
24 black oil-cured olives pitted and halved
1/4 c. sliced basil
2 tbsp. drained capers
3 tbsp. white wine vinegar
1/2 tsp. dried oregano

Directions:
Directions:
Cook potatoes until tender, drain and cool. Peel potatoes and cut in 1-inch pieces and place in large bowl. Add oil and toss. Add cucumber, tomatoes, scallions, olives, basil and capers. Whisk vinegar with oregano and mix into salad. Season with salt and pepper.
