1 c. arborio rice
1/4 c. olive oil
1 tbsp. lemon juice
1 c. packed parsley leaves coarsely chopped
1/2 sweet Italian frying pepper cut into dice
1/3 c. oil-cured pitted black olives chopped
1 tbsp. capers rinsed and drained
1 1/2 tsp. grated lemon zest
1/2 tsp salt
black pepper

Directions:
Bring large saucepan of salted water to a boil. Add rice and simmer until just tender, about 14 min. Drain thoroughly. In a large bowl, toss the rice with the oil and lemon juice. Stir in the parsley, pepper, olives, capers, zest and season with salt and pepper.
