1 lb. wax beans
1 lb. green beans
1/2 c. fresh dill chopped
1/4 c. chopped green pepper
1/4 c. chopped sweet red pepper
4 shallots chopped
2 tbsp. whipping cream
1 tbsp. mayonnaise
1/2 tsp. crushed chili pepper

Vinaigrette:
2 tbsp. red wine vinegar
6 tbsp. olive oil
1/2 to 1 tsp salt
black pepper to taste

Directions:
Directions:
Trim and cook the beans for 4 minutes and cool. Combine beans, dill, peppers, and shallots. Make a vinaigrette by combining the wine vinegar, olive oil, salt and pepper. Combine with the cream, mayonnaise, and chili pepper. Pour the mixture over the beans, toss, and refrigerate overnight.
Vegan option: eliminate cream and mayonnaise and just use the vinaigrette.
