1 medium stalk of celery, chopped
1 medium onion minced
3 tbsp olive oil
1 1/2 lbs fresh wild mushrooms (porcini best)
5 plum tomatoes peeled, seeded, and chopped
1/2 fresh red chili pepper or 1/4 tsp dried
6 leaves fresh mint chopped
salt to taste
4 thick slices Italian bread, toasted

Saute the celery and onion in the oil in a heavy soup pot until the onion is lightly browned. Clean the mushrooms; chop both caps and stems into small pieces. Add to the celery and onion mixture. Cook over low heat for 30 min. by which time there should be a goodly amount of liquid. Stir every so often with a wooden spoon. Add tomatoes, chile and mint to the mixture. Cook for 10 min. Add salt to taste. Place a slice of bread in each of four soup bowls and spoon the soup over each.
