3 tbsp. olive oil
1 c. chopped onions
1 c. chopped celery stalks
1 c. chopped carrots
2 garlic cloves chopped
2 c. vegetable broth
2 c. water
1 c. lentils, rinsed
1 14 1/2 oz. can diced tomatoes
3/4 tsp. salt
pepper
balsamic vinegar

Directions:
Directions:
Heat oil in heavy saucepan over medium heat. Add onions, celery, carrots and garlic; saute until vegetables begin to brown about 15 min. Add broth, water, lentils, tomatoes and salt and bring to a boil. Reduce heat to medium-low, cover and simmer until lentils are tender, about 40 min. Season with salt, pepper and a splash of vinegar if desired.
