3 tbsp butter or olive oil
12 scallions, white part thinly sliced
4 c. fresh or frozen peas
5 c. chicken broth or vegetable broth
3/4 c. creme fraiche
1 1/2 tbsp each finely chopped tarragon, parsley and chervil
3 tbsp. chopped chives

Melt the butter or oil over medium heat in a heavy pot. Add the green onions and sprinkle with salt. Cook until the onions are softened about 5 minutes. Stir in the peas and broth. Bring to a boil, reduce the heat and simmer until the peas are soft about 15 minutes. Meanwhile, mix the creme fraiche with the chopped herbs and set aside. When the peas are soft, remove the pot from the heat and puree in a blender till smooth. Thoroughly whisk in the herbed creme fraiche. Season with salt and pepper. Chill before serving.
