4 c. fresh basil leaves
1/2 c. olive oil
1/3 c. pine nuts
2 garlic cloves, minced
1/4 c. grated Parmesan cheese
1/4 c. grated Pecorino
1 tsp. coarse kosher salt.

Directions:
Directions:
Combine basil, oil, nuts and garlic in a blender. Blend until paste forms. Then add cheeses, salt and blend until smooth. Transfer to small bowl and top with a little oil.

Vegan option: eliminate cheeses; may use other nuts such as almonds, walnuts or pistachios.
