1 lb. spaghettini broken in pieces
1 head of chopped cauliflower
1 minced garlic clove
4 tbsp. olive oil
chopped parsley
grated Parmesan cheese

Directions:
Directions:
Saute the garlic in olive oil in a large pan until golden. Add the cauliflower, salt, pepper and 1 c. water and simmer covered until the cauliflower is soft and breaking apart. Cook the spaghetti in boiling water until done. Drain and retain some of the pasta water. Add pasta to the cauliflower sauce and more reserved water if necessary. Chopped Italian parsley and grated Parmesan cheese may be added to taste.
