1 lb. dry beans (cranberry or kidney beans) soaked overnight
4 tbsp. olive oil
1 yellow onion chopped
2 celery stalks chopped
2 carrots, chopped
1 15 oz. can diced tomatoes
1 to 2 tsp. salt
1/2 c. ditalini or other small pasta

Directions:
Directions:
Drain beans and place in large pot with water to cover. Bring to a simmer and cook over low heat till almost done. In another pot, place onion, celery, carrots and olive oil and cook until browned. When beans are almost cooked, add the tomatoes, onions, carrots and celery mixture and salt and finish cooking, You can add small pasta like ditalini and cook another 10 to 15 minutes till pasta is done.
Add salt and black pepper to taste.
