1 cup lentils
4 c. water
1/2 tsp. salt
1 garlic clove, sliced,
1 head of escarole
1/4 lb.ditalini.

Directions:
Directions:
Rinse lentils and cover with water. Add salt and cook over low heat for about 30 min. Fry garlic in oil until golden. Boil 1/4 pound of ditalini al dente. Mix lentils with oil, garlic and ditalini. Separate leaves of escarole, chop, and boil escarole till tender and add to lentils.. Add salt and pepper to taste.

Instead of escarole, swiss chard or spinach could be used; or, the greens may be eliminated.
