8 cups rhubarb, peeled
1 egg, beaten
1 cups sugar
3 T. tapioca
1-2 qts. frozen strawberries
⅓ cup water (if needed)
2 T. cornstarch

Directions:
Directions:
In a large bowl, mix together the rhubarb, beaten egg, sugar and tapioca. (If desired, soak the rhubarb in hot water) for 5-10 minutes to take off the bitter taste before mixing with the ingredients. In a 3 quart saucepan, add strawberries and cup sugar unless you already added it before freezing the berries. Heat on high to soften and add water if needed and cornstarch. Mix the berries and the rhubarb mixture together and pour into 2 pie crusts.. Dot with margarine or butter and cover with the top crust. Bake in a 350 preheated oven for 45 minutes to 1 hour and 15 minutes.
