4 tbsp butter, divided
3 tbsp flour
¾ tsp salt
2 c milk
1 c sliced fresh mushrooms
¼ c chopped onion
12 eggs, beaten
1½ c grated cheese

Directions:
Directions:
Melt 2 tbsp of the butter in a saucepan. Blend in flour and salt. Gradually stir in milk. Cook and stir over medium heat until mixture comes to a boil and thickens. Remove from heat; add shredded cheese and stir until melted. Cover; keep warm. Melt remaining 2 tbsp butter in a large frypan. Sauté mushrooms and onion until tender and liquid has evaporated. Add eggs; cook and stir until mixture is set. Stir cheese sauce into eggs. Garnish.
