Ingredients: Shortbread layer: 1 1/2 c flour 3/4 c packed light brown sugar 1/2 c butter 1/2 c finely chopped pecans
Cheesecake layer: 2 8-ounce packages cream cheese, softened 1/2 c sugar 1/2 c milk 2 tsp vanilla extract
Pecan pie layer: 3/4 c firmly packed brown sugar 1/2 c light corn syrup 1/3 c butter, melted 3 large eggs, beaten ¼ teaspoon salt ½ teaspoon vanilla extract 1½ cups pecans

Directions:Preheat oven to 350º
Shortbread layer: Combine flour and brown sugar. Cut in butter until mixture resembles course crumbs. Stir in pecans. Press mixture evenly into a greased 9"x13" pan. Bake for 10 minutes, remove from oven and cool slightly
Cheesecake layer: Beat cream cheese with a paddle attachment until smooth. Beat in sugar. Add milk and vanilla and beat until combined. Pour cream cheese mixture over cooled shortbread layer. Bake 15 minutes and remove from oven.
Pecan Pie layer: Combine brown sugar, corn syrup and melted butter. Stir in eggs, salt and vanilla extract. Stir in pecans. Pour over cooled cheesecake layer. Bake 35-40 minutes. |
